INSTRUCTIONS
1. Scallopine each chicken breast (pound it until it's thin).
2. Roll up each cutlet with a slice each of prosciutto and provolone. Hold with toothpicks.
3. Dip the rolled chicken in egg and milk mixture and then roll in breadcrumbs.
4. Brown all sides of the chicken in oil.
5. Bake chicken at 350 degrees for approximately 30 minutes or until chicken is no longer pink.
[To prepare sauce]
6. In frying pan, heat olive oil and some butter; brown garlic, mushrooms and shallots. Add wine.
7. Simmer and pour over chicken to serve.
